
INGREDIENTS
- 4 Eggs, hard boiled and peeled
- 2 tbsp olive oil
- 1 large red onion, finely chopped
- 1 tsp salt or to taste
- 6 fresh curry leaves
- 1 tbsp ginger and garlic paste
- 1 tsp fennel powder
- 1 tsp garam masala powder
- 1 large tomato, finely chopped
- 4 tbsp Rasoi Magic Egg curry spice mix
- 2 cups of water
- 1 tsp lemon juice
- Fresh coriander leaves, chopped
COOKING METHOD
Heat the oil in a medium frying pan. Add the onions and sauté until it turns golden brown. Add the salt, fresh curry leaves, ginger garlic paste and cook for a few minutes.
Add the fennel powder, garam masala powder, chopped tomato, spice mix and sauté for a few minutes on a medium heat until the oil oozes out from the sauce.
Add 2 cups of water and let the sauce reduce for a couple of minutes or according to the desired consistency.
Stir in the lemon juice and fresh coriander leaves and add the hardboiled eggs and coat well in the sauce.
Remove from heat, garnish with more coriander leaves and serve hot with rice or roti.
