- 500gm lamb pieces, diced
- 3 tbsp oil
- ½ tsp cumin seeds
- 1 bay leaf
- 2 cloves
- 2 green or black cardamom
- ½ cinnamon stick
- 1 large red onion, finely sliced
- 1 tbsp ginger garlic paste
- Water or stock, as required
- 6 tbsp Rasoi Magic Mutton Rogan Josh spice mix
- 1 tsp salt or to taste
- 2 tbsp whisked yogurt
- 1 tbsp of lemon juice
- Chopped coriander leaves for garnish
In a bowl, mix the lamb pieces with 2 tbsp of spice mix and marinate for half an hour.
Heat oil in a pan and add the lamb pieces and brown on all sides.
Remove from pan and set aside. In the same pan, add cumin seeds, bay leaf, cloves, cardamom, cinnamon stick and sauté for a few minutes. Add the sliced onions and sauté until golden brown.
Once the onions are golden brown, add salt and ginger garlic paste and sauté for a few minutes.
Add the browned lamb pieces to the pan and coat well with the onion mixture and sauté for a few minutes.
Add the remaining spice mix plus 1 cup of water* or stock. Cover the pan with a lid and let it cook for 40 minutes while stirring occasionally on a low to medium heat or until the meat is tender. (*Add less or more water depending on how much gravy is required.)
Remove the lid, stir in the whisked yoghurt, lemon juice and check for seasoning.
Garnish with fresh coriander leaves and serve hot with rice or roti.
