This is a great little recipe that might just become a family favourite – simply multiply the quantities for larger groups. If you want to make it gluten free, just substitute the first quantity of flour for your usual gluten free mix.
3 bananas, mashed
3-4 tbsp flour
1 tbsp rice flour
1/2 tsp baking powder
1 tsp baking soda
oil for frying
Mix the rice flour, all-purpose flour, baking powder, bananas and soda, in a bowl. Combine well. Heat oil, take a tablespoon of batter and add to the heated oil.
Fry till golden brown. Continue procedure till done with the entire batter.
